Phyllo Rabbit
Ingredients
1/2 cup butter, melted, divided
12 sheets phyllo dough (14 inches by 9 inches)
3 cups diced cooked rabbit
1/2 pound sliced bacon, cooked and crumbled
3 cups frozen chopped broccoli, thawed and drained
2 cups (8 ounces) shredded cheddar or Swiss cheese
6 eggs
1 cup half-and-half cream or evaporated milk
1/2 cup milk
1 teaspoon salt
1/2 teaspoon pepper
Directions
Brush sides and bottom of a 13-inch by 9-inch baking dish with some of the melted butter. Place one sheet of phyllo in bottom of dish; lightly brush with butter; repeat with five more sheets of phyllo. Keep remaining phyllo covered with plastic wrap and a damp towel to prevent it from drying out. In a bowl, combine rabbit, bacon, broccoli and cheese; spread evenly over phyllo in baking dish. In another bowl, whisk together eggs, cream, milk, salt and pepper; pour over rabbit mixture. Cover filling with one sheet of phyllo; brush with butter; Repeat with remaining phyllo dough. Brush top with remaining butter. Bake, uncovered, at 375° for 35-40 minutes. Let stand for 5-10 minutes before cutting.

Honey Glazed Rabbit Skewers
Honey glaze
1/2 c honey
1/4 c soy sauce
3 T cider vinegar
1/4 tsp ground cinnamon
Salt and pepper
Stir together in sauce pan, bring to boil, and simmer 2 minutes. Set aside.
1 rabbit, cut into small pieces
2 yellow Delicious apples, cut into 6 cubes each
8 small potatoes, partially cooked & cut in half
8 wooden skewers, soaked in water for 30 minutes
Mixed salad greens
Thread rabbit, apples, and potatoes onto skewers, baste with glaze. Broil for approx 10 minutes, remove and baste with glaze. Return to broiler until meat is browned and fork tender, basting occasionally. Arrange over salad greens, and drizzle remaining glaze over all. Season with fresh ground pepper to taste.

A Dickens of a Christmas in Cambridge

Autumn Lamb Barley Soup
Suggested to me by a customer at the farm market last Saturday.
In skillet in 2 T hot oil, brown 2# stew meat and remove to crock pot. In meat drippings, cook 1 chopped onion till tender. Add 6 cups of water and stir to loosen meat bits, heat to boiling. Pour onion mix over lamb in crock pot, stir in 1/2 cup med barley, salt, pepper to taste and 1 tsp oregano leaves. Stir in 1 20 0z pkg Brussel sprouts- if large, cut in half. Cook in crock pot till meat and vegies are fork tender.
You may want to add one rutabaga, cut into 1" cubes.

Oleander Babies
They are doing really well. She is a good mother, and keeps them clean and always well fed. There is a big fawn, a tort, and the tiny one is developing some dark color that I am guessing will be tort. Then there are 3 big ones that I'd say are white (REW) except their eyes look dark under their eyelids. So I won't even hazard a guess for a few more days.
I just looked at the sire's pedigree, and they could be pearls or ermines, since he could carry shaded. My luck, they will all be ermines. LOL

Fall Lamb Chops
Lamb Chops
2 T Soy sauce
1/2 c Apple cider
Olive oil
1/2 T onion powder (or garlic)
parsley flakes
coarse ground pepper
Coat baking dish with olive oil. Arrange lamb chops, then sprinkle with soy sauce, apple cider, and shake on the onion powder, parsley flakes, and coarse ground pepper to taste. Bake at 375 for 30 minutes until chops are browned.

New Bunnies
FINALLY! After a loooooong, hot summer, I finally have baby French Angora bunnies in the barn. SHF Oleander (REW) had 7 kits this morning. The sire is HH Medalion, a fawn. Probably a lot of fawns/torts in the litter, with hopefully some creams/dilute torts.
