Anyone have any good pumpkin recipes to share? I'm looking for main dishes, side dishes, soups, etc. NO DESSERTS!!! Chuck and I are trying to eat healthier, and pumpkin is something I'm not familiar with other than pie. (my favorite!)This pumpkin looks surprised to be here, don't you think?

Its a cute little pumpkin. How about pumpkin soup? I don't have a recipe but you can probably find one on the web.

Hi pal, I have a recipe for a Thai soup with pumpkin. It was a coconut based soup with chicken (or maybe prawns?), some sliced chiles, garlic and basil. The pumpkin was cubed and it looked good! I'll try to remember to find it for you... It's in a huge Asian cookbook I have at my parents' house. : )
