Suggested to me by a customer at the farm market last Saturday.
In skillet in 2 T hot oil, brown 2# stew meat and remove to crock pot. In meat drippings, cook 1 chopped onion till tender. Add 6 cups of water and stir to loosen meat bits, heat to boiling. Pour onion mix over lamb in crock pot, stir in 1/2 cup med barley, salt, pepper to taste and 1 tsp oregano leaves. Stir in 1 20 0z pkg Brussel sprouts- if large, cut in half. Cook in crock pot till meat and vegies are fork tender.
You may want to add one rutabaga, cut into 1" cubes.
